Oh yes.  They exist.  Just somewhere that is not here.  Personally I can’t say that I’ve seen one – but I sure have tasted one and they are delicious!  But then again I’m a sucker for anything with coconut and pineapple.This sweet and delectable drink is the tiki inspiration that’s going to get this summer rolling !! (Now if it would only hurry on up and get here already!)  What makes this drink Italian you ask?  Well the Amaretto of course! Here’s how the legend of Amaretto goes: In 1525, a Saronno church commissioned artist Bernardino Luini, one of Leonardo da Vinci’s pupils, to paint their sanctuary with frescoes.[4] As the church was dedicated to the Virgin Mary, Luini needed to depict the Madonna, but was in need of a model. He found his inspiration in a young widowed innkeeper, who became his model and (in most versions) lover. Out of gratitude and affection, the woman wished to give him a gift. Her simple means did not permit much, so she steeped apricot kernels in brandy and presented the resulting concoction to a touched Luini.

1oz Coconut Flavored Rum (Malibu)

1oz Amaretto Liqueur (Disorano)

Fill to the top with pineapple juice

Add just a splash of Cranberry Juice

Garnish your surfer with an umbrella, pineapple wedge and a cherry.  Lay back in that chilly spring sun and think about the warmer days that are soon to comel
