Coconut Cloud Smoothie

One last summer smoothie recipe before I move onto the fall – time stuff.  I’m not ready to let go yet.  Doesn’t seem like mother nature is either because as I sit here and write this today, nearing the middle of September, my plants outside are crispy, the air is hot, and the predicted high for today remains 88 degrees.  In western Washington!  Unheard of.  That being said, the heat still isn’t going to stop me from going to grab a Pumpkin Spice Latte before work today.

Enjoy this delightfully healthy Coconut Smoothie.  Using silk Almond milk as a base, I’ve added a banana and a splash of lime juice for a boost of flavor.  The rum is entirely optional – just depends if you’re in the mood for drinking today or not. The flavors are mild, and can change based on the ingredients you add or choose to leave out.  Enjoy.

Coconut Cloud Smoothie

4oz Slik Almond Coconut Blend milk

1.50z Malibu Coconut Rum (optional)

1.5cups Ice cubes

1 whole extra ripe banana

1oz Sweetened condensed milk (also optional)

splash of lime juice

Sounds complicated?  It’s not.  If you like a little booze in your health smoothie, the Malibu rum adds an extra kick of coconut – and the drink isn’t as sweet as some of us may prefer, so that’s what the condemned milk is for.  But if you’re a health nut, and prefer you cocktails to be alcohol and sweetened free, then keep those ingredients in the pantry.

This one is easy.  Measure everything out (to measure oz, use a regular old shot glass) and pour it all in the blender.  Blend on the crushed ice setting for 15-20 seconds and then pour into a glass.  Makes one smoothie (about 8oz with a little left over)
